Ingredients

    2 1/2 lbs tomatoes
    1/4 cup chopped basil
    1/4 cup chopped green onion
    1 pre-baked pie shell
    1/2 cup grated mozzarella
    1/2 cup grated cheddar
    1 cup mayo
    1/4 cup blue cheese
    1/4 cup pine nuts

Directions

Slice and salt tomatoes. place tomatoes in one layer on drainage rack or colander. Let drain 15 minutes.

Layer tomatoes, basil, scallions in pie shell. Season with salt and pepper.

Combine cheeses, mayo, pine nuts, and spread mixture on top.

Bake at 350 for 15 minutes.
