These are whole wheat muffins with a jam center to make them more fun. These are whole wheat muffins with a jam center to make them more fun.
Number of Servings: 12


    2 cups whole wheat flour
    1/3 cup sugar
    3 tsp. baking powder
    1 tsp. salt
    1 egg
    1/2 cup oil
    3/4 cup non-fat milk
    12 tbsp. sugar-free jam


The oil can be substituted with 1/2 cup of applesauce or mashed banana, but the resulting muffin will be drier.


Combine flour, sugar, baking powder, and salt. Add the egg, oil, and milk and stir just until it's combined. Drop batter into a greased or paper-lined muffin tin, just to cover the bottom of the cups. Add a tbsp. of jam to each of the cups and top with remaining batter. Bake at 400* F for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
