    1 Onion
    1 Head of celery
    2 Potatoes cubed
    Vegetable stock low salt
    use chicken stock if desired a low salt cube
    Tap water 8 fl oz boiled
    mixed herbs
    black pepper
    red or cayenne pepper
    extra virgin olive oil


I put it through a sieve. I don't like the bits off the celery.


saute onions and garlic in a pan with 1 tablespoon olive oil when soft but do not brown them, add celery, lentils and potatoes.add water, stock, herbs and peppers. bring to the boil. Cover and simmer for 45 mins or until celery and potatoes are soft. Blitz with a hand blender or similar.

Serving Size: Makes 6 BOWLS
