Hearty Vegetable soup that is made from whatever veggies you may have on hand. Hearty Vegetable soup that is made from whatever veggies you may have on hand.
Number of Servings: 12


    1/2 sweet yellow onion, raw
    4 cloves Garlic
    1-2 Tbls. Olive Oil
    6 oz Hunt's Tomato Paste
    16 oz Beef Broth
    8 oz Vegetable Broth
    1 cups water
    1 can Yellow Sweet Corn
    4 Carrots, diced
    10 small red potato, diced
    16 oz.can Beans, black
    1/5 Med. Green Bell Pepper, diced
    1/2 Avocado, diced
    4 stalks Celery, diced
    16 oz. Hunts Petite Diced Tomato


Feel free to add and take away any vegetable that you want. Also use any type of Broth. I just used what I had on hand. Can substitute more water in also.


Saute onions and garlic in olive oil until soft. Add tomato paste, broth, and water and stir until paste is mixed in. Add rest of vegetables and bring to boil. Add TVP and bring burner to low or a simmer and cook until potatoes are tender.
