Number of Servings: 3


    1 lb Swai Fish filets (2 medium sized filets)
    1 T. Olive Oil
    1 Medium Onion, sliced into rings
    1 small green pepper, chopped into large pieces
    12 small Baby Carrots, sliced lengthwise into 4 pieces each
    8 oz sliced Mushrooms
    1 T Worcestershire Sauce
    2 T Apple Cider Vinegar
    2 - 3 T Dijon Mustard
    1/4 t Lemon Pepper Seasoning
    1/2 t powdered fenugreek
    1/4 t Salt, .25 tsp


Heat Olive Oil in large covered saucepan over medium heat. Add raw onion rings, green pepper, & baby carrots and cook 10 mins.

Add Mushrooms, Worcestershire sauce, Apple Cider Vinegar, Mustard, and fenugreek. Mix well, scraping any burned veggies from pan, and cook 5 more mins.

Add Swai, sprinkle with salt, and cook till done, flipping once (5 minutes).

Serve fish with veggies as both a bed and a topping.

Serving Size: 3 servings (serve with a side salad)
