Introduction

I have this thing for comfort food; but comfort food usually means very heavy in calories; fat; and a flavor. On a quest to have what I like and make it healthier for me and the family. Here's my spin on a feel good classic. Unless I have a bumper crop of fresh tomato, I use the can version because it is cost effective and you can still get a quality sauce. Ingredients

    1 lb. Extra Lean Ground Turkey
    1/2 c. rice cooked al dente. Rice should still be firm. I like to play with my rice, and brown rice will work well.
    1/2 Head of Cabbage
    2 Cans Diced Tomatos with Seasonings
    1 Can Tomato Paste

Tips

Since I am a fresh garlic fan, to the ground turkey I minced 5 cloves, and added some Italian Seasoning to the turkey.


Directions

Prepare rice as directed on package however reduce the time by 5 minutes. The rice will finish cooking in the casserole and this will prevent it from over cooking.

While prepping the rice, steam cabbage in steamer for 5 min.

Brown Turkey in skillet until done with a fine to medium fine texture.

In saucepan simmer both cans of tomatos and tomato paste just until heated through.

Combine turkey and rice. Spray a casserole dish with cooking spray. Add 1/4 c. sauce to bottom of dish. Layer Cabbage, meat mixture, and sauce like you would a Lasagna. The final layer should be cabbage and topped with sauce.

Cover tightly with cover or foil. Bake 350 until warmed through. Cabbage roll goodness without the fuss of rolling rolls. YUMMMMMMO
