    1/2 cup fresh parsley, chopped
    3 cloves garlic, minced
    1 tbsp lemon peel, minced
    2 tbsp capers, minced
    2 tbsp olive oil

    1 bulb fennel, chopped
    4 sweet potatoes, baked in skin


Finely chop ingredients for Gremoulata.
Chop fennel.
Saute' fennel in olive oil.
Add Gremoulata.
Add 1/4 cup water and simmer until soft.
Stir and scrape bottom of pan.
Bake potatoes and heap with fennel.
