Introduction

These look like little mushroom cap pizzas. I like to use fresh buffalo mozzarella when it's available, but slice it thin. It's a great snack or light lunch or dinner. Ingredients

    2 portabello mushroom caps

    1 turkey italian sausage link.

    3 oz. fresh mozzarella, sliced thinly

    1 plum tomato, diced.

    1 cup of fresh spinach




Directions

Preheat the oven to Broil

Grill or pan fry the italian sausage until fully cooked. (you can also remove the casing and just brown the meat.)

Evenly distribute fillings, ending with slices of mozzarella and a basil leaf on top.

Broil for 10-15 minutes or until cheese is bubbling and brown on the edges.

Serving Size: Makes one meal serving of 2 caps
