    1 medium onion, thinly sliced
    3 cloves garlic, crushed
    2 tsp fresh ginger root, diced finely
    Juice of one lemon
    salt to taste
    8 oz. shrimp, cleaned and shells removed
    12 oz pkg. frozen green beans or vegetables of choice


Spray skillet lightly with non-stick spray. Heat over medium-high heat. Add onion and saute 1 minute. Add ginger and garlic, and stir, saute for 30 seconds. Add frozen green beans (veg), salt and lemon juice. Stir to combine. Reduce heat to medium or medium low, and cover. Steam 2-3 minutes stirring once. Add shrimp, cover additional 2-3 minutes, until shrimp are pink.

Serve with pasta or rice.
