    1 eggplant
    2 zucchini
    1 medium onion
    1 medium red bell pepper
    2 cups mushrooms
    1 cup cherry tomatoes
    2 tbs extra virgin olive oil
    black pepper to taste


chop all veggies and place in a baking dish. Toss veggies with olive oil and black pepper. May add salt if you wish. bake in a pre-heated oven at 400 for 40 minutes. enjoy!
