Ingredients

    1 tsp of olive oil
    2 flour tortillas
    1/2 cup of diced cooked shrimp
    1/2 cup of diced avacado
    3 Tbs Pepper Jack cheese
    1 tsp chopped fresh tarragon
    1Tbs fat free sour cream

Tips

Great use of leftover shrimp.


Directions

In a large skillet heat the olive oil. Place one tortilla in the oil and remove quickly. Set aside. Add the the second tortilla to the pan and sprinkle the shrimp, avacado, cheese and tarragon on top if it. Spread the sour cream on the remaining tortilla and place it oil side up in the pan. Press down with a spatula. Cook for one minute. Reverse the tortillas, press down again, and cook for one to two minutes longer, or until the chees melts. Cut into quarters and serve immediately either with salsa or plan.
