    2 Large Eggs
    1/2 Slice of Thin Deli Ham - Cut Up
    2 Cherry Tomatoes - Quartered
    1/8 Cup Fresh Spinach - Cut Up
    A Few Snips of Fresh Chives
    1 Slice of 12 Grain Bread - Toasted
    Pepper to taste


I don't add salt to this because the ham is already salty.


In a small pan, put the ham, tomatoes & spinach. Sautee for about a minute. Add the eggs and scramble.

Serve on toast.
