Ingredients

* Chicken Broth, 2 cup (8 fl oz)
* Silk Soy Yogurt Vanilla, 6 oz
*Soy milk, Soy Milk, Natural, 1 serving
* Garlic, 2 tsp
* Broccoli, cooked, 1 cup, chopped
* Cheddar or Colby Cheese, Low Fat, 1 cup, diced (If you use the Cabot company they have 0 grams of lactose per serving --- sh!!! real cheese but what a secret)
* Cheddar Cheese, 1 cup, diced
* Garlic powder, 1 tbsp
* Nutmeg, ground, 1/2 tbsp
Directions
My fiance is lactose intolerant. His dad is diabetic. His mom and I are watching our weight. I made this light soup for a SOUPER Bowl for Sunday's Superbowl party. Should make about 8 servings between my dinner tonight, my lunch tomorrow, an extra for my roommate, and plenty for Sunday.
1. Microwave a box of chopped broccoli
2. In large pot heat chicken broth and minced garlic.
3. Add a small container of soy yogurt
4. Add a serving of soy milk.
5. Cut up Cabot (0g lactose per serving) lowfat cheese.
6. Add cheese and broccoli to the chicken broth and yogurt base.
7. Heat and stir until blended
8. Season with Mrs. Dash, nutmeg, garlic powder.
Enjoy! Simple. Light. Delicious.
