Ok- too much fat for a staple, but a great summer treat. Ok- too much fat for a staple, but a great summer treat.
Number of Servings: 8


    8 small size zucchini
    1 1/2 cup panko crumbs
    1 tsp oregano
    1 tsp garlic powder
    1 tsp salt
    3 large eggs beaten
    1/2 cup oil for frying


Slice zucchini about 3/4 inch thick. Beat eggs. Mix panko with seasonings. Heat oil. Dip zucchini slices in egg, then in crumb mix. Cook in hot oil til deep brown, then turn and brown other side. By cutting the zucchini this thick, it does not get too soft with the browning.
If not eating it immediately, let cool on paper towels. Heat in hot oven (400 degrees) for about 5 minutes, just to get hot.
