    1 med. onion, chopped
    1 clove garlic, minced
    2 t. olive oil
    2 t ground coriander
    1 t. ground cumin
    pinch of saffron
    1 tomato, diced
    1 1/2 c. canned chick peas, with liquid reserved
    10 oz. spinach, rinsed, stemmed, and coarsely chopped.
    2 Tb. lemon juice
    1 c. kidney beans
    1 c. corn
    2 leaves fresh mint


Saute onion and garlic in oil. Add spices, sauté another few minutes. Add tomato, chick peas, 1/4c. water, lemon juice, kidney beans, spinach, mint, and corn. Cover and cook for 3 min.

Serving Size: Makes 4 large 1 cup servings.
