Ingredients

    500g Penne
    200g Feta Cheese (crumbled)
    2 Medium Courgette (cut into quarter slices)
    4Tbsp Extra Virgin Olive Oil
    4 cloves of garlic, chopped
    1 Lemon, juiced
    Fresh Parsley

Tips

I serve the pasta on the table, and let people add their own amount of lemon juice, parsley and feta to it as they like. But feel free to mix it all up and serve.
If you like it spicy, you can also sprinkle it with chilli flakes. Yum!


Directions

Cook the pasta (I prefer Penne) as per package instructions. Gently heat the garlic in the olive oil, add the courgette, and cook until soft. Flavour with salt and pepper. When the pasta is cooked, add the courgette in with it. Top with the chopped parsley, feta and squeeze some lemon over it.

Serving Size: Makes 6 good size portions
