    1 medium egg
    1 tbsp chopped corriander/cilantro
    1 Chilli pepper (finely chopped)
    4 spring onions/scallions (finely chopped)
    200g or 2 fillets salmon, skinned and boned


Makes 6 fishcakes, serves 2-3 people, serve with salad and thai sweet chilli dipping sauce.

Mix all the ingrediants together in a blender until smoothish. (easiest to do first 4 ingredients first, then add salmon and brend again)

Form into 6 balls. Fry in v. small amount of oil/dry fry until golden on both sides, flipping halfway through.
