Introduction
This is a nice creamy cilantro sauce that is perfect for fish tacos. This is a nice creamy cilantro sauce that is perfect for fish tacos.Number of Servings: 32
Ingredients

1.5 cups of cilantro chopped.
1 cup yogurt (I use greek but feel free to substitue)
1 cup pistachio nuts (shells removed)
2 Poblano Peppers Roasted with skin, stem, and seeds removed
Juice and zest from one lime (use more if sauce is a little too thick
2 cloves garlic
Directions
Roast the Poblano peppers and remove skin, stems and seeds.
(I do this on the grill and then pop them in a paper bag for a couple minutes. They will steam themselves in the bag so getting skin off is a breeze)
Next combine all ingredients in a food processor or blender. Blend until it is a smooth consistency.
Taste, if it needs salt and pepper adjust to your liking.
Voila!
Serving Size: Makes about 2 cups sauce. I based serving size on 1 Tbsp
