Ingredients

    Lettuce wraps

    1 baked or grilled chicken breast (3oz)
    1 scallion (green onion) diced
    2 TBSP chopped celery
    1/2 TBSP Olive Oil
    3 lrg. leaf Iceberg lettuce
    salt & pepper to taste

    mix together all ingredients for lettuce wraps except lettuce leafs. refrigrate.

    Spicy Yogurt Dip

    32 oz. fat free plain yogurt
    1 tbsp garlic powder
    1 tbsp onion powder
    1/2 tsp McCormick Season-all salt

    line a strainer with a coffee filter or paper towel.place strainer over a bowl(this catches the liquid that will drain off the yogurt). spoon the yogurt into the filter-lined strainer. Cover and refrigerate for 8 hrs. or over night. This process yields about 16 oz yogurt cheese (1/2 cuo yogurt cheese = 1 probiotic serving). Season the cheese lightly with the seasons above or add freshly chopped herbs such as parsley, rosemary or thyme.
    then mix 8 0z of dip with lettuce wrap mixture and spoon on 3 lettuce leafs and wrap the lettuce around the filling.
