Number of Servings: 6


    1 can diced tomatos
    1 package Momma Socorro's Salsa Mix
    1 can Black Beans
    1 can Pinto Beans
    1 can Sweet Corn
    1 package Chicken Breast Tenderloin
    4 tbsp Sour Cream


Combine tomatos and salsa mix in 8x8" baking dish.

Drain and discard liquid, then stir in beans and mix well.

Add chicken Pieces and "bury them" in salsa mixture.

Drain and discard liquid, then add corn to top.

Cover and bake 35 minutes, uncover and bake an additional 10 minutes or until chicken is done.

Serve in bowl with sour cream on top.

Serves 6.

BEWARE: This dish is VERY HOT!

To tone down the heat, substitute any brand of salsa for the tomatos and mix portion of the recipe.
