Introduction

Yummy as an appetizer on pasta night! Yummy as an appetizer on pasta night!
Number of Servings: 8

Ingredients

    8- 1/4 in Tomato Slices
    2 Tbsp Balsamic Vinegar
    2 c Fresh Spinach
    2 tsp Olive Oil
    1/4 c Shredded Mozzarella Cheese
    1/4 tsp minced garlic

Directions

Marinate tomato slices in balsamic vinegar for 1 hour. Place tomato slices on sprayed baking sheet. Roast tomatoes on 375 degrees for 7 minutes. Meanwhile, saute spinach and garlic in olive oil. Once tomatoes are finished roasting, top with spinach mixture, then top with cheese. Slide back into the oven until cheese is melted and brown!

Serving Size: makes 8 1/4 in Slices
