    2 (6 oz each) Chicken Breasts
    8 oz Medium Salsa
    3/4 cup Fresh Pineapple, diced (reserve 1/4 cup)
    1/2 cup Scallions, chopped (reserve 1/4 cup)
    1/4 tsp Lemon Juice
    1/4 tsp Lime Juice
    1/4 tsp Kosher salt
    1/4 tsp Hot sauce
    1 TBSP dry Caribbean Jerk Seasoning


Preheat oven to 375d
In a medium bowl combine: Salsa, Pineapple (reserving 1/4 cup), Scallions (reserving 1/4 cup), Lemon juice, Lime juice, Salt, and Hot Sauce.
Combine Caribbean seasoning and salt in a small dish. Coat chicken with mixture and place chicken in baking dish.
Spoon salsa mixture over chicken and cover dish with foil.
Bake for 30-40 minutes or until cooked through.
Plate and top with reserved pineapple and scallions
