Ingredients

    2 Large Zuchinni thinly sliced into coins
    1/2 cup finely diced onion
    2 - 14 oz cans of diced tomatoes (low sodium)
    1 cup dry Stove Top Everyday Stuffing Mix
    4 oz. lowfat Mozzarella Cheese

Directions

Spray a round casserole dish with Pam. MIx all ingredients together and bake uncovered 30 - 45 minutes at 350 degrees.
