Introduction

Great indulgence on a Sunday morning. I use egg whites in place of some of the eggs and watch my portion size to be sure it doesn't get out of control! Great indulgence on a Sunday morning. Number of Servings: 4

Ingredients

    1/2 whole wheat baguette (after it's hard)
    3 large eggs
    1/3 - 1/5 cup egg whites
    salt and pepper to taste
    1/2 cup shredded cheddar cheese
    3 - 4 slices deli ham
    enough butter to grease the baking dish


Directions

Slice the baguette into 1/2 inch thick slices and lay in a pre-greased 8X8 baking dish. Pour the beaten egg mixture over the bread slices and stick the whole pan in the fridge overnight. In the morning, add more liquid eggs (if you think the casserole needs it) and whatever toppings you like, I used cheddar and ham here. This is just as good with sausage, bacon, veggies, tofu, and on and on. Bake for about 15 minutes covered at 350 degrees, then remove cover to let the cheese on top brown, another 10 minutes or so.
