Introduction

Number of Servings: 30

Ingredients

    4 oz (i stick) butter
    3 T sugar
    3 T splenda (use less for less sweet cookies)
    1/2 c packed lt. brown sugar
    1 t vanilla extract
    1.5 c rolled oats
    .75 c whole wheat flour
    .5 t baking soda
    .25 cinnamon
    1 c dried carnberries
    1 c chopped pecans

Directions

Cream butter, add sugar and mix.
Add vanilla, egg, mix together.
Sift together flour, baking soda and cinnamon, add to mixer. Add oatmeal, nuts and pecans and mix until just combined.
Using two teaspoons, scoop mounded batter onto an ungreased cookie sheet.
Bake at 350 for 12 to 14 minutes.
Remove from oven and allow to cool five minutes then loosen from tray before allowing to complete cooling.
