Introduction

Ingredients

    Ingredients:
    1 Cup Flour
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cinnamon, ground
    1/2 tsp Ginger, ground
    1/2 cup Granulated Sugar
    1/2 cup Brown Sugar
    2 tbsp Butter, unsalted
    1 Large Egg
    1/4 cup Applesauce, unsweetened
    1 tsp Vanilla Extract
    2 Cups steel cut Oat
    1 Cup Peaches - diced pretty small. (Canned peaches work great)

Tips

Store in an air-tight container so they don't dry out.


Directions

Combine flour, baking powder, baking soda, salt, cinnamon & ginger in a medium mixing bowl.

In a larger mixing bowl cream together butter, both sugars on medium speed. Add egg, vanilla & applesauce. Mix in dry ingredients. Add oats & diced peaches.

Drop on parchment covered baking sheet. Bake at 350 degrees for 10-12 minutes or until edges become light brown. Cool on wire racks.
