Number of Servings: 25

Ingredients

    5 bunches of green onions
    2 - 4 oz cans of green chilles
    2 cups chicken broth
    1 lb colby jack cheese
    1/4 tsp ground cumin
    25 fajita size shells
    4 cloves of garlic or 2 TBS Garlic
    3 TBS butter
    3 TBS flour
    1/4 tsp salt
    Whole chicken
    1 1/2 cup heavy cream

Directions

Chop green onions & mince garlic
melt butter and saute garlic and onions
stir in flor and gradually add chicken broth until smooth
add chilles, salt and cumin ground
simmer for 15 min
add heavy cream
boil and shred chicken
fill shells with 1/4 cup chicken, 1/8 cup cheese and sauce
place in pan and pour remaining sauce and cheese
bake at 350 for 20 min

Serving Size: 2 enchilladas = 1 serving
