Lite Asian Cabbage Salad

1 head Napa cabbage, chopped (about 12 cups)
1 cup sliced scallions (green onions)
3 Tbs. vegetable oil
3 Tbs. seasoned rice wine vinegar
1 Tbs. soy sauce
1/2 c. slivered almonds
1 Tbs. sesame seeds
1 Tbs. margarine
3/4 c. chow mein noodles
To make this recipe even lighter, reduce oil to 2 Tbs. and increase rice wine vinegar to 4 Tbs. If a stronger Asian flavor is desired, substitute 1 tsp. sesame oil for 1 tsp. vegetable oil. Cilantro (up to 1/4 c.) is also a nice addition.
Add scallions to cabbage.
Whisk together oil, rice wine vinegar and soy sauce. Add to cabbage and toss to mix.
Top with chow mein noodles.
Serving Size: 1 cup with ~ 1 Tbs. chow mein noodles
