    1.5 cups whole wheat flour
    3/4 cups white flour
    1/2 cup oat flour
    2 tsp baking powder
    .5 tsp baking soda
    .5 tsp salt
    1/2 cup butter
    3/4 cup sugar
    2 eggs
    2 tbsp or zest of and entire orange
    1/2 cup orange juice
    3/4 cup or 6 oz vanilla greek yogurt, non fat
    1 cup blueberries


I have made this recipe with lemon rind and lemon juice, increasing the sugar to one cup.


Preheat oven to 375. Line a muffin tin with paper liners or spray with cooking spray.

Mix all dry ingredients together, add blueberries and mix to coat blueberries.

Cream together butter and sugar. Add eggs one at a time until fluffy. Add remaining ingredients and mix until combined.

Add wet ingredients to dry ingredients. Mix until everything is moist. Don't over mix. Batter will get tough. Scoop into muffin tin.

Bake 22-24 minutes or until toothpick comes out clean. Cool in muffin pan 5 minutes. Then transfer to wire rack to cool completely.
