    3 cups uncooked, pasta, any type (I use farfalle)
    1/4 cup italian dressing
    1/2 cup shredded parmesan cheese
    1 cup carrots sliced
    1 cup green pepper chopped (1 medium)
    1 can 14.5 oz red kidney beans, rinsed and drained
    1 can 14.5 oz diced tomatoes with italian herbs, drained
    2 cups baby spinach, packed then sliced


Chop carrots and pepper and put in bottom of strainer.

Cook pasta according to directions and strain over carrots and pepper. Drain well. Transfer to a bowl, toss with italian dressing. Set aside to cool.

Drain and rinse kidney beans well, this will remove most of the sodium from the beans. Drain the tomatoes.

When the pasta is cool, mix together with the cheese, beans, tomatoes and spinach. Refrigerate.

Serving Size: makes 4 entree or 6 side servings
