    4 boneless skinless chicken breasts, boiled and cubed
    1 cup nonfat sour cream
    1/2 red bell pepper, chopped
    1/2 green bell pepper, chopped
    1/2 large onion, chopped
    1 (10 3/4 ounce) can healthy request cream of mushroom soup
    25 Ritz crackers (reduced fat)
    1/2 cup mexican cheese (2% milk blend)
    salt and pepper


Original recipe suggested adding 1/2 cup of butter on top of the Ritz, but I've omitted to skinnify it.


1. Preheat oven to 350F.
2. Boil chicken breast until tender; drain and cube.
3. Spread evenly over the bottom of a casserole dish.
4. Salt and pepper to taste.
5. Add chopped vegetables.
6. Mix sour cream and chicken soup in a separate bowl.
7. Spread the sour cream and soup mixture over the chicken and peppers in the casserole dish.
8. Sprinkle cheese over the soup mixture.
9. Crush the Ritz crackers and spread over top of the casserole.
10. Bake in a 350F oven until top is golden brown, approximately 20-30 minutes.
