Ingredients

    refried beans (3 cups)
    ground turkey (1 1/2 lbs)
    taco seasoning (to taste)
    shredded cheddar cheese (2 cups)
    2 boxes cornbread, mixed
    2 cups tomatoes, chopped
    2 cups scallions, chopped
    sour cream optional

Tips

For a spicier take, you can add some green chilis to the cornbread mixture.


Directions

In a 9 x 13 pan spread the refried beans on the bottom. Ground the turkey and add in 3t taco seasoning. Spread over the beans. Layer the cheese over the beans and meat. Mix the cornbread per the package and add in 3t taco seasoning. Spread over the beans, meat, cheese mixture. Bake according to cornbread package. When serving serve with chopped tomatoes, scallions and sour cream.
