Zucchini Lasagna made with Lean Ground Turkey, Zucchini, Spinach, Ricotta and Mozzarella cheese. Zucchini Lasagna made with Lean Ground Turkey, Zucchini, Spinach, Ricotta and Mozzarella cheese.

    3 Large Zucchini
    1.5 Pounds (24 oz) of Lean Ground Turkey
    1 cup of frozen spinach
    16 oz of Ricotta Cheese (I should have used part skim)
    16 oz of Mozzarella Cheese (part skim)
    16 oz Classic Alfredo
    2 Small Yellow Onions
    2 Large Eggs ( I would omit the 2nd egg and just use one in the ricotta)
    You can add the desired amount of seasoning. I did use a little bit of salt and pepper in both the Ground turkey and the Zucchini.


I am not sure of exact cooking time I believe it was 60 minutes on 400 but I left the house and my Dh finished it. 10 minutes before its ready to come out of the oven remove aluminum foil to allow the cheese to darken.


Dice Zucchini and cook on medium heat. (I used pan spray). Add desired seasoning. I used a dash of salt and pepper and a herb mix.
Dice your onions and precook those.
Precook your hamburger and add desired seasoning. I added salt, pepper and a herbal mix.
Mix eggs, spinach and ricotta in a small bowl.
After the meat is fully cooked add onions and Alfredo sauce.
layer your lasagna (I used a 9x13 pan)
Sauce (I used a little bit of Alfredo sauce on the bottom)
Zucchini, meat sauce, ricotta, cheese (Mine made two layers)
Cover and put in the oven on 400.
