    3/4 C. Canilla Extra Long Grain Rice - Cold and Pre-Cooked
    2- Eggs
    1 T Olive oil
    1 T Soy Sauce, La Choy Lite
    1/4 C Peppers, sweet, red, fresh
    1/4 C Mushrooms, fresh
    1/4 C. Onions, raw


To make this a bit healthier you can use a lighter oil or pam and use a brown rice instead of canilla golden. This is just what I had on hand. Feel free to mix and match veges to your taste.


Add 1/2 of the olive oil to pan and add 2 eggs and scramble. When cooked through pull out and add the last 1/2 of olive oil and add rice and heat through. Then once heated through, add peppers, mushrooms, onions and soy sauce. Heat through.

Serving Size: Makes two 3/4-cup servings
