Ingredients

    1 3/4 c. half and half
    1 c. shredded colby jack cheese
    1/2 t. salt
    1/4 t. paprika
    1 t. grated onion
    3 eggs
    1/2 small can of green chili's
    *pinch of cayenne (optional)
    1 T butter

Directions

Preheat oven to 325* - Melt 1 T butter in 9x9 baking dish.
In a small pot, mix half and half, salt, paprika, and onion, and cook just until simmering.
Remove from heat, then add chilis and cheese (stirring while adding). Let cool for about 5 min.
Mix eggs in separate bowl, then add to warm mixture.
Pour into buttered dish and bake 30-35 min. (just til set)
