Ingredients

    1.5 lb lean pork
    5 scallions
    3 cloves garlic
    1 bell pepper
    2 cups sliced mushroom
    1 cup sliced carrots
    2 cups prepared brown rice
    3 tbsp low sodium soy sauce
    1 tbsp peanut oil
    2 eggs

Directions

marinate pork in your favorite asian marinade.
prepare rice
get your peanut oil hot in a wok
add onions and garlic in 1st for about 30 sec
add all veggies until just tender
add pork and sear until cooked through
add cooked rice to wok and toss
scramble raw egg than add it to the mixture
toss and serve, top with extra scallion for garnish

Serving Size: makes 5 bowls...about 2 cups ea
