    Red Potato, 1 large cubed
    Sweet potato, 1 cubed
    Yellow Potato, 1 large cubed
    Carrots, 4 medium cubed
    Honey, 1/8 cup
    Cider Vinegar, 1/8 cup
    Paprika, 1/4 tsp
    Salt, 1/2 tsp
    Ginger Root, 1 Tblsp


In small bowl, combine honey, vinegar, paprika, salt, ginger root. Set aside.

Preheat oven to 325 degrees. Spray or grease a 9x13 inch cooking pan. Set aside.

Scrub all the potatoes and carrots, leaving skins on. Chop into 1/2 inch cubes and combine in large bowl. Pour honey mixture over vegetables and toss gently to coat all the cubes. Spread the vegetables in an even layer in the prepared pan. Bake for 60-90 minutes. Every 30 minutes, use a turkey baster to baste the vegetables with liquid from the pan (or a little extra honey and vinegar, if there's not enough liquid). Stir vegetables to ensure even baking. All vegetables should be tender when done.
