Number of Servings: 16

Ingredients

    8 medium Russet potatoes
    7 hard boiled eggs - peeled and chopped
    10 radishes - washed and chopped
    1 green bell pepper - washed and chopped
    1 cup mayo
    1/4 cup French dressing
    4 tbsp sugar
    salt and pepper - to taste

Tips

For best taste, refrigerate the salad for at least an hour before serving.


Directions

Boil potatoes with skin on until well done. Let cool, then peel with spoon. Chop potatoes into bite sized pieces and put into a large bowl. Add the eggs, radishes, and bell pepper.
In a smaller bowl, mix the mayo, dressing, sugar, salt and pepper. Adjust taste as necessary, no ingredient should overpower the taste of the others.
Pour the dressing over the potato mix and stir until well covered.

Serving Size: Makes about 16 1/2-cup servings.
