    3 small carrots, diced
    1 large onion, diced
    3 small celery stalks, diced
    1 small red pepper, diced
    1 can beans (pinto, red, or black)
    1 cup frozen corn
    2 cups fat free low sodium chicken broth
    1 large can diced tomatoes (28 oz)
    1 package McCormick lower sodium chili seasoning mix
    1 pound ground turkey.


Saute carrot, onion and celery in sauce pan. Add red pepper and saute a few more minutes. Add ground turkey and brown until no longer pink. Mix in chili seasoning until well blended. Add beans,tomatoes and chicken broth and mix well.
Simmer for 15 minutes and then add corn. Simmer another 5 mnutes.
