Ingredients

    4 Peppers
    1 can sliced waterchestnuts
    1 16 oz can fire roasted dices tomatoes
    1 16oz chub Iseneros Italian chicken sausage
    1 12 oz jar Prego pizza sauce
    1 Tbsp dried basil

Tips

Consider making for planned lunches - instead of putting peppers into a baking dish, place 2 halves each pepper filled with sausage mixture into freezer containers before cooking peppers. When ready to enjoy, place defrosted container in microwave until heated through.


Directions

Place sausage in sautee pan and cook through, about 10 minutes. Break up sausage into small peices. While sausage is cooking, chop waterchestnuts into small pieces. Add waterchestnuts, tomatoes, pizza sauce, and basil to sausage and allow to simmer for 10 minutes. Cut peppers in half, lengthwise. Place peppers in a shallow baking dish. Spoon sausage mixture into pepper halves. Place in 350 oven for 10 minutes, or until peppers are softened.
