    Lean Beef (or Lamb) Mince, 10 1//2 oz (300 gram)
    Red Ripe Tomatoes, 1/2 cup, chopped
    Pine Nuts, 3 tbsp (browned)
    Onions, raw, 1/2 cup, chopped
    Moroccan Seasoning 1 Tblsp
    Pepper, black, 1/2 tsp
    Salt, 1/2 tsp
    Cottage Cheese, 1% Milkfat, 1/2 cup
    Reduced Fat Feta Cheese, 1 3/4 oz (50 gram)
    1 tsp Lemon Peel
    Juice from 1/2 a lemon
    3 Large Portabella Mushrooms, @ 21oz (600 grams total)


Prepare Portabella Mushrooms for stuffing (peel if required).

Saute onion and mince in a skillet until brown add the rest of the ingredients except the cheeses and cook until soft. Add the cheeses and the lemon peel and juice and mix.

Stuff into the prepared mushrooms.

Place in a casserole dish and pour a little water around the mushrooms, cover

Cooked covered at 350 degrees F (180 C) for @30 minutes until mushroom is cooked. Brown under a grill if required at the end.

Serving Size: Makes 3 servings of one large mushroom each
