Ingredients

    1 cup Hungry Jack - Wheat Blend Mix
    1/3 cup Water
    2 Tbsp Kroger Zero Calorie Baking Sweetener
    2 Tbsp Kroger Zero Calorie Brown Baking Sweetener
    2 Tbsp Vegetable Oil
    1/6 cup Egg Substitute (40 grams)
    1/4 cup Hershey's Sugar Free Chocolate Chips

Directions

Preheat oven to 400F. Combine all ingredients, except chocolate chips. Thoroughly combine, but do not overmix. Stir in chocolate chips. Spoon batter into lightly greased mini muffin pan, filling 3/4 full. Bake 10 minutes or until toothpick inserted into center comes out clean. Turn off oven and allow to cool in oven w/door ajar for 2 to 3 minutes.

Serving Size: Makes 12 mini muffins. Serving size: 1 mini muffin.
