This recipe is an easy way to add lots of veggies into your day. I start it on the stove top to saute the veggies then continue to cook in the oven. Ingredients

Ingredients:
Egg, fresh, 8 extra large
Vidalia Onion - 1 medium sliced thin
Canned Tomatoes (DelMonte), 1 cup (can)
Olive Oil, 1 tbsp
Helluva Good Sharp Cheddar Cheese, 2.525 oz shredded
Broccoli, fresh, 1 cup, chopped
salt and pepper to taste
Directions
Preheat oven to 350 degrees
On medium heat on stove top:
cook onion in olive oil until soft and slightly carmelized
add tomatoes with juice and broccoli until most of tomato juice is evaporated
Whisk eggs separately add to mixture
stir eggs into veggie mixture
add shredded cheese to top
Place pan in oven (be sure pan is oven safe) and cook in oven for 20 minutes.
Take out pan after 20 minutes and let it rest for at least 5 minutes for cheese to set and slice in 8 servings.
Serving Size: makes 8 servings
