Number of Servings: 12


    12 slices day-old whole grain bread, crusts removed and cubed (I used Brownberry Healthy Multi-Grain)
    1-1/2 cups cubed ham
    1 cup chopped green bell pepper
    1/3 cups diced onion
    1-1/2 cups shredded low-fat cheese (I used Sargento reduced-fat Mexican blend)
    7 eggs
    3 cups fat-free milk
    1 teaspoon salt


The original recipe called for 3 teaspoons of prepared mustard in the egg mixture. I'm allergic, so removed it. I think it tastes fine as-is, but mustard lovers and those who want an extra kick should put that back in.


In a greased 13"x9" pan, layer bread, ham, green pepper, cheese, and onion.

In a very large bowl, combine the eggs, milk, and salt. Pour over layered ingredients. Cover and refrigerate 8 hours or overnight.

Remove strata from oven 30 minutes before baking. Preheat oven to 325 degrees. Bake for 40-45 minutes or until a knife inserted in center come out clean. Let strata rest for 5 minutes before cutting.
