Ingredients

    Zucchini-green and yellow
    Mushrooms
    Peppers-red, green and yellow
    Broccoli
    Cauliflower
    Hunts Diced Tomatoes w/Basil, Oregano & Garlic

Directions

Take all ingredients and cut into bite-size pieces. For the zucchini you can use green or yellow variety...or both. Steam cauliflower and broccoli till tender crisp. Put all ingredients with enough oil to keep veggies from sticking into an electric skillet at 275. If using a frying pan, cook on medium. Stir fairly regularly till veggies are done. Makes 4 1 cup servings.

AS an extra, you can put in cut up chicken and/or serve over brown rice or whole wheat pasta.
