Number of Servings: 18


    2 cups whole wheat flour
    2 tbsp splenda
    1 tbsp vital wheat gluten
    4 tsp baking powder
    1/2 tsp sea salt
    2 cups nonfat milk
    2 large eggs
    1/4 cup unsweetened applesauce


When the edges of the pancake are solid and the surface is covered with bubbles, you are probably ready to turn the pancake. Actually, makes 18 pancakes (use a 1/3 cup measuring cup to spoon onto griddle).


Combine dry ingredients in a large mixing bowl and be sure to distribute the baking powder and gluten evenly. In another bowl, beat eggs. Add milk and applesauce and combine. Add to dry ingredients. Stir until well-combined to ensure that the baking powder and salt are evenly distributed throughout the batter. Pour onto hot griddle and cook for about 2 minutes on each side. Reduce heat if pancakes are browning too much or burning. Raise heat if taking more than 2 minutes to cook on each side.

Serving Size: Makes 16 pancakes
