Ingredients

    1/2 cup Near East Roasted Garlic and Olive Oil Couscous
    2 bell peppers
    6 mini sweet peppers
    1 medium onion
    1.5-2 oz. Trader Joe's Crumbled Feta w/ Mediterranean Herbs
    1 medium tomato
    1 clove garlic
    1/2 tbsp. olive oil
    1 tbsp. mint

Directions

1.) Preheat oven to 350
2.) Heat olive oil over medium to medium high heat. Dice onions and garlic; Dice 6 mini peppers; Add to skillet and cook until onions slightly translucent (5 minutes)
3.) Dice tomatoes and add to skillet; Add mint to skillet with tomatoes; Cook for 1-2 minutes
4.) Add prepared couscous; Cook for about 5 minutes
5.) Cut off tops of 2 whole bell peppers. Scoop out all seeds and membranes
6.) Spoon prepared filling into peppers. Bake 20 minutes covered with aluminum foil
7.) Sprinkle feta on top of peppers; Bake additional 10 minutes

Serving Size: Makes 2 Stuffed Peppers
