Introduction

Ingredients

    Sweet potato, cooked, baked in skin, without salt, 2 small
    Goat Cheese, Soft, 2 oz
    Ricotta Cheese, part skim milk, 2 Tbs.
    Cottage Cheese, Nonfat, 1/4 cup (not packed)
    Green Onions, 1 sliced
    paprika
    salt and pepper

Directions

Serves 2, Ready in 20 minutes
!. Preheat oven to 400. Scrub spuds, prick lightly with fork and microwave for 6 minutes. (Or bake in oven for 1 hour till done). When cool enough to handle, cut the potatoes lengthwise and scoop out the insides into a small mixing bowl. Set potato skins aside.
2. Mash the cooked potatoes with cheeses, salt and pepper to taste. Distribute evenly back into skins. Top each with green pepper and paprika.
3. Return spuds to microwave (1 minute high) or oven (10 to 15 minutes at 350) or until hot. Wrap or store in a portable container to bring to work or the gym; microwave 1 /12 to 2 minutes before eating.
