    1 pound cooked Chicken breast Shredded
    Artichoke hearts canned in water, 1 cup (remove)
    1/3 cup Sun Dried Tomatoes chopped
    Black Olives, small can
    1/2 cup crummbled Feta Cheese

    2 Tbsp Olive oil
    2 Tbsp Lemon Juice
    1 Tbsp Dijon Mustard
    Salt and Pepper to taste


Combine Chicken, Artichoke hearts, chopped sun-dried tomatoes,& olives in large bowl.

Combine dressing ingredients into small bowl, Wisk until well mixed.

Pour dressing on top of chicken mixture, tossing until well combined.

Top with crumbled feta cheese.

Serving Size: Makes about 8 1/2 cup servings
