Introduction

Ingredients

1 1/2 cups Whole wheat pasta (dry)
2 Tbls extra virgin olive oil
250 grams prepared squid (calimari)
5 cloves fresh garlic crushed and minced
2 Tbls shredded parmesan cheese or asagio cheese
dash fresh black pepper
1 Tbl chopped fresh parsley or dry parsley
White wine (optional)
Tips
This recipe is also good using a can of chopped clams.
Directions
To prepare squid:
1. Under cold running water, rub off skin and rinse tenticles.
2. Pull out the inner parts of body with Eye and tenticles including the transparent cuddle bone. If you want to use the tenticles, cut the eye from the tenticles.
3. Turn body inside out and rince again.
4. Cut body into rings.
Bring one quart of water to boil and add 1 1/2 cups whole wheat pasta. Cook for 10 minutes. Test for doness (aldante). Drain and rinse.
While the pasta is cooking, heat 2 Tablespoons olive oil in large frying pan. Add minced garlic,chopped or dry parsley and cleaned prepared squid. Stir Fry being careful not to over cook. When the garlic turns translucent and the squid changes color it is done.
(You may wish to add a splash of white wine at this point. optional)
Pour over cooked and rinsed pasta. Add Parmesan cheese and toss lightly. Add freshly grated pepper to taste
